Wash and thoroughly dry the apples. Insert sticks of your choice into the tops of the apple cores. Make sure they are firmly holding the apple.2. Add the sugar and water to a heavy-based saucepan and heat on low heat until the sugar is fully dissolved.3. Add the vinegar and golden syrup and cook on a low to medium heat until reaching a ‘hard crack’ temperature of 150degrees celsius. You can also test the toffee by dropping a small amount in cold water. It will harden instantly and crack when ready. If still soft, continue heating.4. Prepare a rectangular/square dish with some baking paper and set aside. 2. Add the Condensed Coconut Milk, Chocolate, Fresh Raspberries and Hazelnuts into a pan and heat while stirring over a low heat until the chocolate is nearly melted.3. Add the Vanilla Extract and continue stirring until the chocolate is fully melted. Be careful not to overheat the mixture or the chocolate will burn. 4. Remove from heat and pour immediately into your prepared paper lined dish.5. Sprinkle the top of the fudge with the Dehydrated raspberries and more hazelnuts. Press gently into the surface of the fudge. 6. Set in fridge until solid. Take approx 5 hours.7. Slice into squares with a sharp knife heated slightly in some hot water to assist with cutting. 8. Happy Easter! 🐇🐣🐰 Why have plain Easter eggs when you can have chewy toffee Easter Egg Cookies! These vegan cookies are so incredible you will not be able to stop with just one. Not only can you have them now, because they are just so quick and easy to make, but you can also make them after Easter, when you have no idea what to do with all those left over chocolate eggs. In fact this recipe can be adapted all year round with any chocolate of your choice. To make:INGREDIENTS (Makes Approx. 12 Large Cookies)100 g Unsalted Vegan Butter (softened at room temperature)100 g light brown sugar50 g caster sugar200 g self-raising flour1 tablespoon of ground Flax Seed2 tablespoon Toffee Syrup0.25 teaspoon Vanilla Essence0.25 teaspoon salt200 g Chips/Chopped Chocolate/Broken Easter Eggs. I prefer to use dark but any will work.12 Mini Easter Eggs of your choice (homemade or store bought or leftovers)METHOD1. Mix the flax seed with 3 Tblsp of cold water and allow to sit for at least 15mins to create a flax seed egg.2. Using a mixer, cream together the butter and sugar until pale and fluffy.3. Add the flax egg, Vanilla Essence & Toffee Syrup and whip into the sugar and butter.4. Add the flour and salt, mix until the cookie dough comes together, then add the chocolate chips. Mix through evenly.5. On a baking tray lined with paper, divide dough into 12 even balls. Leave enough space for cookies to spread.6. Place cookies balls in a very cold fridge or freezer for at least 15mins to firm and cool the dough.7. Bake in oven at gas 4/180C for 12-15 mins, until slightly golden.8. Take out the cookies and place a mini chocolate egg in the center of each cookie. Place back into the oven for an additional 30 secs to slightly melt the egg into the cookie.9. CHOCOLATE PEANUT BUTTER EASTER NESTS 🐣🍫A fun, quick and easy easter recipe to make with the kids. These nests use crunchy fried chow mein noodles, crunchy peanut butter, dark chocolate and a smidge of golden or maple syrup for a touch of sweetness. When set, they can be used as the perfect easter themed edible vessle to serve up a range of sweets and desserts including chocolate mousse, custards, ice cream, fresh fruits, or simply add a few of your favourite @doisyanddam Good Chocolate Eggs and @moo_free_chocolates chocolate bunnies and munch away as you please. INGREDIENTS (Makes 6-8 Baskets)- 100gms Crunchy Peanut Butter or another of your favourite crunchy nut butter- 10gms Coconut Oil- 141gms (1 Tin) La Choy or other crunchy fried chow mein noodles- 150gms Melted Dark Chocolate @callebautchocolate 80%- 30gms of Golden or Maple SyrupMETHOD1. Melt chocolate using your preferred method.2. In a separate bowl, place the peanut butter, golden syrup, and coconut oil. Place in the microwave and melt for 1 minute on high or until a runny consistency.3. Combine the peanut butter mixture with the melted chocolate and mix thoroughly.4. Add to noodles and mix till all the noodles are thoroughly coated.5. Add a few spoons into bowl shaped moulds. Press and build up around the outer edge to create nest like shapes. 6. HAPPY VALENTINES DAY! 💖Nothing says “I Love You” more than to offer your Sweetheart a table setting of Vegan Cake Pops & Handmade Chocolates. A quick recipe to make, the cake is whipped up in no time in the microwave, smashed then combined with homemade jam and shaped as desired. When covered with rich dark chocolate, sprinkles and pink dyed white chocolate, they make for a decadent “pre-dessert” (if you know what I mean). 💓😉With the left over melted chocolate I simply made use of some heart moulds to create these decorated chocolates, giving them a dusting of edible gold powder, and sugar sprinkles. Recipe for the cake pops below:INGREDIENTS (Makes 10-12 Pops)- 120gms Melted Vegan Butter- 120mls Plant Milk- 125gms Fine White Sugar- 220gms Plain Flour- 2 Tablespoons Beetroot Powder to Colour (Can also use food colouring to desired shade)- 1.5 Teaspoon of Baking Powder- 1 Teaspoon Vanilla Extract- 2 Tablespoons Vegan Cream- 150gms of Jam of choice- Pop SticksIDEAS TO DECORATE (Optional)- Melted Dark @kokoacollection & White Chocolate @moo_free_chocolates - Dyed White Chocolate- Sprinkles of Choice- Edible Gold Dust- Heart MouldsMETHOD1. I’M DREAMING OF A WHITE CHRISTMAS 🎵 🎄 Have you tried “White Christmas” slice? It is mid summer during christmas in Australia, so it was wishful thinking we would ever see a white Christmas. However that would not stop us singing this carol, as we would make this must have holiday treat as kids. So very simple, it is just a mixture of Rice Crispies, mixed with desiccated coconut, red and green glacé cherries, saltanas, then set using powdered sugar, melted white chocolate and copha. We would then pressed the sticky mixture in a flat tray and pop it in the fridge till hard. SMOKED BOURBON HOT CHOCOLATE & BOURBON VANILLA CREAM.This boozy hot chocolate recipe with a good hit of bourbon will make you feel warm and heady, leaving a subtle scent of smokiness on your palate and the desire to simply curl up and escape from the dark chilly autumn night.Recipe Makes 2 Mugs:Requires a smoking gun with either a dome or a lid to place over your mugs. I used oak smoking chips but you can try with various wood chips to add subtle unique flavours and scents to your hot chocolate.60mls Bourbon Liquor6 Tablets of @kokoacollection Hot Chocolate. - My favourite for this drink is 75% Haiti1 Tablespoon Black Cocoa Powder3 Teaspoons Dark Brown Sugar500mls of Nut Milk of choice. - I used Cashew Milk.Topping:150mls Vegan Cream1 Tablespoon Bourbon Liquor1 Teaspoon Vanilla Essence2 Teaspoons of Powdered Sugar Dusting of Black Chocolate PowderOptional: Chocolate Sauce1. Make your topping ready by whipping up the cream to form medium peaks. Add the powdered sugar, bourbon, and vanilla and continue whipping until stiff peaks. Keep in fridge until ready to use. You can place the cream in a piping bag to make it easier to pipe on top. 2. In a small saucepan or hot chocolate maker, place all the ingredients to make the chocolate. Stir over a low heat using a whisk until all ingredients are combined and the chocolate is fully melted.3. Fill your mug with the hot chocolate and place your dome or smoke lid over your glass. Allow the smoke to entirely fill the space then sit then turn off the smoker and allow the smoke to infuse the hot chocolate. This will take around 1-2 minutes, depending on how subtle or prominent you wish the smokiness to be. 4. Remove the dome/smoking lid then pipe or spoon the bourbon cream on top and finish with a dusting of black cocoa powder and optional chocolate sauce. VEGAN BLUEBERRY & CHIA CAKE RECIPEHappy Friday! I hope everyone has had a great week and you are ready to enjoy the weekend. This is a basic cake I made a couple of weeks back to use up the rest of the blueberry and date jam I posted not long ago. CAKE INGREDIENTS200gms Vegan Sweetened Condensed Milk - I used @naturescharm Coconut Milk100 mls Vegan Milk - I used @plenishdrinks coconut milk120 mls Sunflower Oil275 gms Self Raising Flour1 Tablespoon Baking Powder2 Tablespoons Chia Seeds1 Teaspoon Vanilla1 Cup of Blueberries1 Cup of Jam - Recipe Below or any store-bought of your choice.METHOD FOR CAKE1. Preheat the oven to 180C/160C Fan/Gas 4. Grease 18cm springform cake tin with a brush of sunflower oil2. Hand whisk together all the wet ingredients except the jam. Make sure everything is well combined and airy.3. Add Chia Seeds and give another light whisk.4. Sift in the flour and baking powder, bringing together the cake batter till combined but not overdoing it.5. Cover the base of your prepared cake tin with some cake batter. Dollop some jam randomly and sprinkle some blueberries. Cover with more cake batter and repeat the layering till batter is used up. Finish by topping the cake with a scattering of blueberries. 6. Loosely cover with foil and bake in the oven for 40 mins, then remove the foil and bake for another 20 minutes or until an inserted skewer comes out clean but moist. 7. Allow to cool then serve topped with a vegan whipped cream mixed with some jam or a simple dusting of Icing Sugar.NO ADDED SUGAR JAM RECIPE1. Place 200gms of dates in a bowl, cover with boiling water, and allow to soak for 15mins.2. Drain, then blend the dates to a smooth pulp.3. Add the dates, plus 300gms of blueberries to a saucepan and cook for 15mins on low heat.TIP: If during the cooking your jam gets thicker than you would like, simply add a tablespoon of water. ...
